I've been setting up my 8 bit machines after my move, and I'm short a couple monitors. I've been looking into what options there are. Modern televisions work for CVBS inputs just fine. (Thanks again Cheryl!) For some of the more technical display modes, there appears to be converters that will work. What looks interesting is converters for chroma/luma output, and 80 column output. Chroma/luma is actually the same as s-video, so a TV with an s-video input should work, as long as you have the right cables. Another option is an s-video to VGA (or HDMI) converter, which are available for about $25.
C=128 80 column mode is actually CGA video. To make this work, there are CGA to VGA converter boards available. They are being made for the video game machine refurbishing community, as I gather a lot of old machines use CGA.

From a bit of reading, the BIT-C-128 Video DAC appears to be a popular choice - www.bit-c128.com/Some discussion of it on Lemon64 - www.lemon64.com/forum/viewtopic.php?t=61400 as well as links to further conversations. I would think, on an LCD/LED TV, 80 column out to VGA or HDMI and 40 column to s-video or composite should give pretty good results.
